I have exactly the same issue which has only occurred since the last Elementor update (5.2.3). Specifically, it only happens when the number of images in the carousel to show is set to one. If I set it to two or more the problem is not present. The problem is not dependent on the animation method chosen. I have tried fade, slide and roll. I have two carousels with several images each using fade as the animation. It seems as though all the captions are superimposed on each other at the same time.
