I have already created my attributes on exact the same way, but still what I am getting is separate records for each combination of color-size, but 1 size at a time.
The fact that other users are using your plugin does not mean that it is working.
The skroutz template is wrong if you wish I can send you my XML at your email to check it.
As you can see, Skroutz requirements are specific, they want each color to be as a separate product with the available sizes.
It has nothing to do with the parent product.
So, you should either remove or fix your Skroutz template, because now it is incorrect.

This is okay, but it is not compliant with Skroutz anymore. So, the template that you are providing is incorrect.
