Please run a conflict test to rule out other plugins or themes as the issue.
UM has now combined there roles with WP roles. click edit under user then scroll down to Ultimate member Role. you have 3 select options Member , Admin or ‘Test’.
also at the top there is now an option that says “change role to…”
select dropdown to whatever UM or Wp role you want or need.
make sure you are running Latest version UM 2.048

Not Recieving user emails or admin notification emails
also you might run a conflict test to make sure no other theme or plugin is causing this issue.
also just incase i missed anything there is a checkbox in email settings
use html in emails
make sure this is checked also.

Currently UM does not have a function that will change the color of a theme based on a users sex. however you can go here and Request it be added in a future update.
also you can hire a developer that knows UM coding to do this for you.
please contact your hosting and have them back up your website to a previous point if they can.
it should give you an option-if you have a host like wpengine.com or siteground.com they both have options to restore backups, just open a support ticket with them.
Upgrade Process not complete UM
all you have to do is hit the Run button to initiate the Database update it should update just make sure everything works after.

are you suggesting a match based cpatcha option instead of google recaptcha?
you need to update the UM Database we suggest downloading a backup plugin and saving copies to Disk Drive or Desktop. before you update. so you can recover if the update fails.
please run a full conflict test , there could be a plugin that could also be causing this issue.
