Seems that the plugin is taking month and day names from the WordPress es_ES.po and es_ES.mo, overriding those specified on the custom language file the-events-calendar-es_ES.mo and the-events-calendar-es_ES.po placed on /wp-content/languages/plugins/

I have just tested this, so what would be a workaround? I wanted to change the month and day names…

Hello, issue was solved yesterday, my fault.
When editing a product category, there is a display option that overrides the customizer option.
