Okay, I fixed this myself.
For everyone facing a similar issue….if your site is already using recaptcha v3 then you cannot use recaptcha v3 in this plugin. (At least as far as I can see….;) )
So try setting the plugin recpatcha to v2 and in Google admin console create a new property with V2 recaptcha.
