I just reported a 500 Error through the plugin feedback popup when I went to deactivate it and then came across this post. It turned out that although WooCommerce was activated for my site, I had used a Plugin Organizer to speed up my Home page and had disable WooCommerce.
Anyways, I reenabled it for that page and now it’s working! ??
So, it looks like I will have to double-check my plugins to make sure all of the dependent plugins are disabled simultaneously; normally, I do, but this one slipped by.
