When there is a critical error such as this, it could be the server needs to be updated to allow for more memory/time. Looking at the initial Status Report I see the following:
WP Memory Limit: 256 MB ### Server Environment ### Server Info: Apache PHP Version: 7.4.26 PHP Post Max Size: 32 MB PHP Time Limit: 30
The Memory Limit can be increased to 512, and the PHP time limit set to something around 300 instead of 30. The Post Max size can be increased as well, either doubled or set to something like 128 MB. You can either do it by yourself our contact your host. Check this page for more info: https://woocommerce.com/document/increasing-the-wordpress-memory-limit/
Try those and see if it helps. However, if the error persists, please, send us the Fatal Error Log: Share a copy of any fatal error log found under WooCommerce > System Status > Logs

To find the generated logs:
1. Go to WooCommerce > Status > Logs
2. In the top right corner, open the drop-down and select the latest fatal error log, then click view to load it.
3. Copy/paste the log into your response on this thread.`Thanks

The product category page is a post archive template and all archive templates use the global header image only. However, there are a few ways to show a custom header image for a specific page: with a child theme, plugin or with some custom css.
Can you please give us more details on how do you want to display the image in the header?

To hide your sold-out products, go to: WooCommerce > Settings > Products > Inventory and there you have the option “Out Of Stock Visibility” – Choose to hide out of stock items from catalog.

I’m not sure if I understand your question correctly. Did you lose the ability to edit the theme templates or does the option to edit the e-mail does not show under WooCommerce>Settings>Email and clicking “Manage”?
Can you post a screenshot of what you’re seeing?
