I have 4000+ products in my website. So why plugin not index all products automatically.

I just inform you auto index is enabled.

Every day i want to re-index products.

Please provide solution for this problem

Yes Your are right “Uncategorized” category is default.

But why some random category assign. ?

In admin only Uncategorized is Checked other are unchecked.
