I am thinking that the best option here will be to deactivate plugins one by one via MySQL, see this article: https://www.ostraining.com/blog/wordpress/disable-a-wordpress-plugin/ and then, by process of elimination, figure our which one is causing the problem.

You will be able to read reviews etc and test a demo before purchase.

That being the case, I’d recommend talking to your hosting company’s support team and check any status pages they may have. It is likely that they are aware of the problem and are working to fix it.
Unless you manage your own server. In that case you need someone with knowledge of linux and apache to dive in there and take a look.
It may be coincidence that you happened to be updating your site at the same time.

The solution was simple, /%category%/%postname%/
Apparently if a post resides in multiple categories then whichever is higher alphabetically will take precedence
