Nvm. I figured it out. I was limiting my post to BBpress html tags only. I opened it up to a wide range and it worked.

That is very bizarre.
At this point, I’d recommend reinstalling Ultimate Member because that’s not normal behavior.
You can also perform a theme/plugin conflict test to see if that might be the reason.
Can you clarify what you mean by “Does not work anymore.”
If you mean the search ability disappears, double check your Members directory to see what user roles you have selected to use the search feature.
The default Ultimate Member plugin will not allow you to do what you want.
However, this plugin by @suiteplugins should help get you where you want to be: Relationships for Ultimate Member
You do not need an external plugin. You need to create a registration, login, and profile form for your users to start.
1. Under the Ultimate Member tab in your WordPress Dashboard, select “Forms” and begin creating a form for registration, login, and profile.
2. Once each form is created, take note of their shortcodes.
3. Create a page for each form you just made (if those pages do not already exist) and paste your shortcodes in their respective pages.
4. Next, go to your Ultimate Member settings. Under the “General” tab, make sure your pages match (ie. User Pages = [YourUserPage]; Register Page = [YourRegistrationPage]; etc.)
5. Add the links to your Login and Registration page to your sites Main Menu or Top bar.
Sidenote: If you want to add social media login to your site, you will have to either buy Ultimate Members Social Login plugin or find an alternative somewhere else.
You do it following what I said in my first comment:
1. Go to your user profile form and create a new field using “Multiselect.”
2. Add your categories under “Edit Choice.”

Hmm, okay. Same strange not to be a core feature.
It would be helpful if you could provide a link.
However, given my current understanding, to solve your issue, you can create a new user role or modify a current user role.
Once you have the user role you wish to add your searchable category, create/modify a profile form for that user role. In the profile form, create a new field, either drop-down/multi-check/radio, containing the categories you want users to select.
Once you’ve completed the profile, go to your Member’s directory and add the field as a search item.
