Since I couldn’t find a way to do this, I decided to write my own plugin for it. In case anyone else is wanting the same thing (publish in the future with a post date in the past) then see here:

Yeah, I don’t need it, but I figured that sooner or later someone would ask for it. Added now so that you can set the hour. Also fixed it so that it takes into account the blog timezone setting for when it actually makes the post. Wait for version 1.1 to become available on the site.
