302 is necessary here because the redirected target is dynamically determined. 301 means that it’s fix more or less forever and for all users the same way. Here the user’s browser settings are used to calculate the target. The browser settings differ from user to user and also could be changed.

If this doesn’t fit your needs, please look for another solution. Professional solutions for multi language sites are WPML and qTranslate X. They work without the multisite concept.
