You need some other plugin to switch currencies. Flexible Shipping doesn’t provide such functions. There are plugins on the market that calculates shipping costs based on the currency the user chose.

I tested this issue. I got 500 error trying to save an invoice. It works when I have WooCommerce installed. It should work stand-alone but as I see it doesn’t. Could you please check if it works with WooCommerce for you? If so, I will report a bug.

WooCommerce is not necessary. The plugin works stand-alone. But wc_clean is instead for WooCommerce. Do you use the latest version of the plugin?

Such an option is available in PRO version only.

So if a customer buys for example 12 items of product priced $3.50 each, then shipping cost should be $.30 + 12x$2 = $24.30?

It is not possible – not only by this plugin but by WooCommerce. You can show only one shipping cost which of course can be combined for different shipping classes.

Could you show me the way you configured Flexible Shipping? I need system status, too.

Have you updated your WooCommerce recently? Could you send me system status from WooCommerce -> System Status tab?
