This has resolved itself. I think I had a conflicting, old product which I deleted completely and it seemed to just fix itself. Weird.

WordPress: v4.4.1
Mailchimp for wordpress: Version 3.0.10
WooCommerce: Version 2.4.13

Also, the country value from the WooCommmerce checkout is not being passed through to MailChimp.
