(Sorry for the late response!)
Yes, I have done the usual testing (disabling all other plugins etc) and found that it did not resolve the issue.
However, when I checked again this morning it seems that the general pop-up is working (the one which is set to come up automatically after a few seconds). But the pop-ups I have set to come up after a button click are still not working, essentially nothing happens. Please see links to screenshots further down of how I have set up the button pop-ups. They have been working perfectly fine in the past but with the new update to WP 5.6.1 / Elementor they have stopped.
I am running PHP version 7.2.3 on the site which is a bit out of date but I cannot easily update this myself.
