Could you ensure that you have checked the box to “Enable Match Attributes”? This is necessary to map your WooCommerce contact attributes with your SendinBlue contact attributes.

Upon installing the Sendinblue plugin, your contact attributes are synced, as well as the following calculated values:
WOOCOMMERCE_LAST_30_DAYS_CA (turnover of last 30 days)
WOOCOMMERCE_ORDER_TOTAL (total amount spent)
WOOCOMMERCE_CA_USER (total turnover per contact)The calculated values are for your own use, rather than use in an email to one of your customers, for example.
I recommend you create a test product e.g. with the price set to zero and checkout as if you were a “real” customer, in order to properly test the email template and ensure the attributes are populating.
It sounds like you are using the correct attributes so if the issue persists, please get back in touch and detail exactly which attributes are not working.

As stated in the article, such changes should only be undertaken by developer.

The script used for both chat and marketing automation tracking is the same.
With this in mind, if you have tracking enabled (via our plugin), the default messages of the chat widget cannot be modified (without modifying the script itself, which we do not recommend).
You can of course disable the tracking script from inside the plugin!
