i am having the same problem as well. wordpress just keeps updating and won’t downgrade. your hosting provider could be disabling downgrade. i would talk to them.
update: i had siteground disable auto update for wordpress and went down to 5.5 wordpress. my theme developer has not released an update for 5.6 yet so this will have to suffice until they do. hope this helps others.

Yes, my theme is the problem as well. I invested so much into the theme. My theme is COOPBANK. If anyone knows how to solve the theme issue let me know!
