Looks like this feature has not been implemented yet.
I’ve send a feature request to the original authors to make it possible to customize the email message.

I don’t quite understand your problem. Anyway, please keep in mind that Jetpack Sharing is not intended to add special markup to your site, so it becomes connected to social media platforms.
However, it adds sharing buttons to your site, so your visitors can very easily share your pages on social media platforms.You’re probably looking for Open Graph and Google Authorship features, which are not provided by Jetpack Sharing.
