I map them with https://
but when Im in the network admin everything when I click to go to the dashboard it adds in an s ??

Humm. That is how the server is setup. nginx config, mapped domains are in port 80, while the primary domain 443 for ssl. No matter what I do the WP admin defaults mapped domains to https.

Admin dashboard is set to the mappeddomain.com/wp-admin if I had it the other way SEO wasn’t ideal as a number of the links were showing as site1.domain.com

How did you resolve the https redirect on mapped domains when it should be just a regular https:// ?
