wp_options value keeps unsetting itself

    I’m working on a plugin that uses a value in the wp_options table to generate a shortcode. The option value is being set properly but every time I try loading a page with the shortcode on it, the value field gets blanked out. I’m sure I’m missing something really obvious, but I’m tearing my hair out here.
