wp_options – huge number of rows

I have about 608,000 rows in wp_options database which my sysadmin said is slowing down my site like crazy. Question, what can I do to reduce that size?
I have about 1000-2000 products and before I had about 500 variable products with a lot of different options and attributes. Some products would have 500-1000 variations. I removed all of that and deleted most of the attributes from woo commerce, but it seems that these were not deleted from database and they are still there.
What can I do to reduce the wp_options database?
