Typically YouTube links are handled by an oEmbed-compatible API swapping a link in your post body for HTML markup returned by YouTube servers. The Facebook plugin for WordPress does not construct special markup handlers to try to convert YouTube or other built-in oEmbed providers such as Instagram to og:image and/or og:video markup beyond what is exposed in WordPress Core media APIs.

So in a nutshell I can’t do it. Is it possible to attach a thumbnail of my choosing to the facebook post? That would be sufficient.

You can attach a thumbnail of your choosing on a per-post level through the post thumbnail feature of WordPress. Set a featured image and the Facebook plugin for WordPress will include the image as Open Graph protocol.
