WordPress 5.7 update broken SSL / HTTPS – Problems connecting to Stripe API

I have been tackling this issue for 2 weeks now, since my WordPress 5.7 auto-update. From what I have found so far, WP 5.7 introduced a HTTPS Detection and Migration solution into the new build. In my case, I had Really Simple SSL plugin installed to handle my original switch to HTTPS. I had removed Really Simply SSL 2 nights ago, and everything started working again. Today, we encounter Stripe Failed API error, which has been present intermittently during my 2 week outage.
This issue has been intermittent, works great for days, then pops back up.
Also, getting this notification when this issue happens.

WooCommerce status shows Force SSL is good…but Woo logs say the following:
