Woocommerce Storefront Product Data Box Issue Unresolved

I am using WooCommerce and “Storefront” Theme to sell t-shirts.
The domain where I am having an issue is: captntom.com
I am accessing my WordPress dashboard via a Windows 10 computer.
I can provide you with login credentials if needed for testing.

In my WordPress dashboard, while on the “Edit” page for the product above, in the box titled “Product Data”, I have NO option to select “Simple Product” or “Variable Product”. The drop down select box listing these two options that I should be seeing… is not there.

Also while in the Product Data box, I cannot enter product data attributes and variations.
Of all the sub-categories that used to be editable the only one that shows anything at all is “General”. All other subcategories, (Inventory, Shipping, Linked Products, Attributes, Variations and Advanced) are blank and will not allow me to enter anything. This is where I need to be entering new attributes and variations for this particular product… and others yet to be published.
Regarding this issue, all was working fine at one point not too long ago, perhaps a month now. PHP was upgraded several weeks ago. This may or may not have had something to do with causing the issue.
Prior to contacting you on this issue I have had the support department at my website host, iPage, look into this issue very closely. At one point I noticed that possibly it was caused by not having SOAP Client enabled. Recently iPage has enabled soap client and this has not resolved the issue.
A few days ago iPage support emailed me saying this is a Woocommerce issue and that I should look elsewhere for resolution. Please see the email I recently received from iPage support immediately below:

I have logged in to the WordPress Admin: https://www.captntom.com/wp-admin/ with the provided log in details and found that SOAP client for your hosting account is activated. I have accessed the URL: https://www.captntom.com/fishing-t-shirt-boatique/shop/eclipse/ and followed the provided steps and I was able to replicate the issue. The issue appears to be with the woocommerce plugin. Therefore, please contact the woocommerce plugin vendor or the support team of the woocommerce plugin to fix this issue.
—–I’ve also deactivated many plugins I was using in an effort to eliminate any plugin conflicts that may have caused this issue. I plan to reactivate these one-by-one, testing as I go, after my issue is hopefully corrected.
Here are the plugins I had deactivated while testing. A few of these may be currently enabled.

WP Mobile PackRegarding “Storefront WooCommerce Customiser” I’ve tested with this plugin activated and deactivated and the issue persists. I need this plugin to remain activated otherwise all of my product pages show incorrectly.
I’ve also experimented for a solution on my dashboard here: Woocommerce>Attributes
I created a new “TEXT” Attribute named “SIZES” in the hopes of using this to correct my issue with no results.
I am running “Storefront” as a Parent theme. I have been reading that perhaps it should be a “Child” theme and maybe making this change will correct my issue. I am NOT an experienced developer and attempting this task may be a little too much for me if I attempt to do it on my own.
Summary: I am stuck and unable to figure this one out. I’ve been on the net, WordPress, Woocommerce and Storefront support, forum and documentation pages looking for an answer with no results. I have several new product pages that I really need to publish right away. Please help me if you can. THANK YOU!
