Woocommerce – Placing Order

I’m needing a way to be able to have my woocommerce site place an order (without a shipping method or payment method) basicly when the customer places the order it sends out an email to the user showing their order and a email to myself with the order details.

then we calculate the shipping based on the weight/size/dimension/etc/ update the total threw the “orders” section of wordpress/woocommerce backend and then let the customer know the updated total purchase price including shipping.

How can i make this work through woocommerce or at least let the customer place the order from the site without a shipping and payment method selected on the woocommerce back end.
