Woocommerce: how to create sidebar category menu on shop page?

If you’re wanting to add a widget to the sidebar for product categories, there is a product category widget that you could take a look at using: https://docs.woocommerce.com/document/woocommerce-widgets/#section-1

Each theme is different, in terms of widgetized areas, but if yours supports it, you could use that to display categories and subcategories.

Otherwise, you could look into using something like Product Filters for WooCommerce, which would allow you to add a filter via a shortcode to any desired page.
