I use Square Woocommerce with over a thousand products. Originally, the description did not sync. Square is the product of record. Now, it seems that has changed and my lengthy website descriptions have been replaced with single line receipt descriptions or are blank. Help! What happened? Why wouldn’t it sync to the short product description instead???

Square is the product of record. Now, it seems that has changed and my lengthy website descriptions have been replaced with single line receipt descriptions or are blank.
I’m sorry to hear about the trouble you’ve been having with product descriptions. With Square as System of Record, the Product Descriptions on synced products are updated to match the description you’ve configured in Square.
There isn’t an option to sync those to a short description or revert the changes, unfortunately.
The best way forward would be to reach out to your WebHost to see if there’s the latest backup from when the products weren’t synced, and then revert to that backup. Please do note that any new changes in the store including transactions or products will be lost from the point your restored to.
That said, if you’d rather only sync inventory, you can disable SOR from WooCommerce > Settings > Square:
