I have watched the video on one of the links above and I am still no wiser on how to remove the shop name and the words ‘Billing Address’ from the packing slip.

If there are any other instructions, that would be great.

The doc tells you how to override template files.

I sent a link to the template file with ‘billing address’ in it.

Override it. Edit it. ??
