Where do I find/edit the checkout field labels

Hello,
Sorry for what appears to be a simple question but I have been asked to pick up where another developer has left off. He set up bookable products which require a date and time to be selected. Once the date is selected, the available time for that date appears. Because only 1 time per date is available, people do not know that they have to click on the Time button before continuing. Is there a way to:
1. Not require or show the time field or
2. Add text which says “click on the time” once the date is selectedThanks.
