Additionally or instead, I usually just add a new user if the site allows new user registrations and then ‘promote’ that user to admin via the database.

Yes, it’s probably not a plugin, though the plugins probably should have been deactivated during the conversion back to single site.

If you ever want to do this again I’d recommend instead just migrating any subsites from the multisite that you want to keep then removing them from the multisite itself. That’s for subsites.

The overhead for staying a multisite is negligible and leaves you with the ability to run a sandbox site there to play around with or a temp site if you need it. Very handy!
