What's the difference between this and the paid addon?

The free version of the WooCommerce add-on supports only Simple Products. The paid version supports Grouped Products, External/Affiliate Products, and Variable Products.

Does Bookable extension products works?

It depends how the extension works.

If it just uses custom fields, then it should be pretty easy to import bookable products: https://www.wpallimport.com/documentation/custom-fields/theme-plugin-fields/

If it is more complicated then that then you’ll probably need to write some custom code to get it working.
