What are the various files and why are they different dates?

It’s this bit here: d80f0d4bd718 thats effectively your backup ID and tells you which backup belongs to which set.

It just looks like your files and your DB are on different schedules.

Something I do notice is that you are not backing up your Uploads, I would recommend you include these in the backup.

Why? How did that happen?

In the settings tab you can set up different schedules.

Often users will backup their Databases more often than their files.

What is the “others” file? It has all kinds of stuff in it. Should I copy just the wp-content directory from it? What about the mu-plugins or languages directories in it? Also, does the order matter? Should I restore the wp-content folder first? last?
