Weird characters/encoding in html output

I’m confused and hoping for a bit of help. After updating Yoast plugin today, words with characters such as an apostrophe didn’t display correctly.
For example, the word “won’t” was showing as:
w o n & # 0 3 9 ; t
(But without spaces)
I restored a previous file/database backup (after deleting everything in public_html, which my host advised).
And I thought this fixed it. It did, in my WordPress editor (I use classic editor). And in the actual user-facing web page.
But I noticed in Google Chrome when I view a blog post, right click, and select “view source”, the source code still has the weird characters.
Should I be concerned? I don’t see it when inspecting other blogs/competitors. I’m worried about if this is normal and whether Google can “read” it (I rely heavily on SEO and search traffic).
