Website name and logo not appearing in Twitter feed

I just created a WP site for my business and linked it to Twitter feed. When I post my business URL on Twitter, it does not show the default image in WP and it shows my business name with an ampersand not the word ‘and’ (it’s important that it’s ‘and’ not ampersand). I don’t have this issue with Facebook, which is also linked with my WP site. Any way to address this? Hope that makes sense, thanks.

PS Please note the ampersand only appears in the logo, nowhere else (I know, branding!).
