VatPercentage versus taxRates

I’m seeing an error that’s blocking me from pulishing products,

__Sales tax users cannot use the vatPercentage attribute, please use taxRates_ when creating Zettle product from WooCommerce product 247015

Those don’t seem to be options. I’d really like to see more documentation on handling sales tax from a US perspective.
