Sorry ignorant question I’m new to this. What do I enter in the IP section after Cache TTL, in IPs box. Is it my own website IP? The whole website IP?

In many cases, the IP is the same as the A record of your domain.
In other cases, the IP is a local address behind a firewall/load balancer/etc.

The IP is used for purging Varnish cache. So IP means the IP[:port] where Varnish is set to listen.
