Variations – Attributes – or something else?

    Looking for some advice on how to achieve what I am after. I have played a little bit and can kind of get what I am after, but not really.

    I am trying to set up one product, but have various options that change over time.

    Example
    Class A (doesn’t change in price or content)
    available on Date 1 at Location 1, Date 2 at Location 2, Date 3 at Location 1 (The Date and location appear on the same line, so there is no need for different options/variations of those.)

    I am looking for a way that I create the product, and the client can add the dates which then automatically appear on the product. It would be a bonus if once the date passes the variation is no longer available, but not essential. Happy to just delete the variations as the date passes.

    Is this a simple set up that I am missing?
