Variable Subscription w/Inventory Category Check?

I want a variable subscription product that will check the current stock levels of all of the products in a specified product category and then present a variable attribute list for the customer to choose from.

We are setting up a coffee subscription service for regular, automated delivery. Not all coffees we offer are available at all times–sometimes we’re out of stock of a particular coffee.

When the customer is buying the variable coffee subscription product, we would like them to see a list of all currently available coffees for them to choose from.

Is there a way to do that? Composite product, perhaps?
