Variable Product to show options without Checkout/Paypal buttons

I have a store with a mixed bag of products fulfilled via different third-party websites, direct digital downloads, and via myself.
Because of the variety of options, I have two scenarios I’d like solutions to:
Scenario 1
I’m selling a book where the paperback is fulfilled by Amazon and the ebook is fulfilled by Amazon, Google, Apple, and Kobo. I’d like to be able to set a price for the Paperback and eBook and have that display when a customer selects either from the dropdown. With either choice, I’ll also display branded store buttons linking off to each site for purchasing. However, what I do not want is for the ‘Add to cart’ and Paypal buttons to automatically appear for this single product (should still appear for other products on the site).Scenario 2
I’m selling a different book where the Paperback is fulfilled directly by myself, but the eBook versions are fulfilled directly on the third party sites (as above). I’d like to show the ‘Add to Cart’ and ‘Paypal’ buttons on the product page for the Paperback only. For the eBook version, I’d like to just display the buttons to the third party stores and hide the ‘Add to Cart’ and ‘Paypal’ buttons. Prices should be set for both Paperback and eBook versions.In both cases above, I know how to set up a variable product with Attributes and Variations. I just want to be able to set prices, but hide the ‘Add to Cart’ and ‘Paypal’ buttons at a Variation level.
