use php classes for a plugin or not?

I’m trying to expand my php and wordpress knowledge by creating a massive project. Something like a shopping system plugin which u can use in wordpress.
Now I would like some suggestions before i start..
Is it better to create classes in your plugin.
likeif (!class_exists("DevloungePluginSeries")) { ? ? class DevloungePluginSeries { ? ? ? ? function DevloungePluginSeries() { //constructor ? ? ? ? ? ? ? ? ? ? } ? ? ? ? } ? } //End Class DevloungePluginSeries
or is it better to not use these?
Because I’ve read lots of tutorials and some make use of classes and some don’t…
