Update to release candidate and then continue to update ta stable release?

Hello!
Would it be possible to update to a release candidate and then when the stable release is out update to that one? Or how does it work? Can you then turn of the plugin so it doesn’t update to future betas automatically?
If so, I would like to do that on one of my sites to make it easier for me to test it out ??
