Update a date field by Clicking a toggle?

I’d like to make the interface easy and fast for end users and wanted to capture the date/time by letting them select a checkbox to mark an event time. The idea is that the time is then passed to a date field without them having to manually put it in, or open a form. (They can do it from the table view)
Any ideas how to capture the date and time and pass it to another field on a click?
