    Is there a way of increasing the number of events the upcoming event shortcode displays or is it set at 5?

    Certainly; it’s the after parameter: [my_calendar_upcoming after="25"].

    If you use the shortcode generator to build your shortcode, it’s in the options there under ‘Event Range’.
