Unnecessary HTML White Space

I really want to move to Gutenberg from the Classic Editor. But the only thing that’s keeping me from moving is the unnecessary white space between each paragraph in html.
For example, see the source code of the latest wordpress blog post.
You will notice there is a lot of white space in html between each paragraph.
I copied the source code and manually removed all the white space between between the paragraphs. The original html file had a size of 33418 bytes and after removing the empty white space (between paragraphs), it had a size of 33370.
I know that 48 bytes is not a lot. But it’s still completely unnecessary for useless white space. Moreover, for longer blog posts, that white space can amount to many extra KB in the html document.
What is the use of this White Space anyways? Why are we trying to make it easier for humans to read html? Bots don’t care about these white space.
I would like to understand why the developers decided to include this unnecessary white space in the html.
