I think the fatal error is due to the reported plugin issue

I can’t find any issue related to this fatal error in the Stripe GitHub repo. Looks like we have to look elsewhere.

It seems you’re running an outdated version of Woo Subscriptions. As we can see from the official Woo.com product page it has now reached v. 5.7.0.
