Unable to save event details

Hi all,
I’m sandboxing a new site and really only have the basics setup right now:
– Avada / FusionBuilder theme
– bbPress (via Avada installer, no forums configured)
– Contact From 7 (via Avada installer)
– Fusion Builder (via Avada installer)
– Fusion Core (via Avada installer)
– Slider Revolution (via Avada installer)
– The Events Calendar (via Avada installer)
– WooCommerce (via Avada installer, disabled for troubleshooting)
– Event Tickets (disabled for troubleshooting)Wordpress and everything above is all updated to latest versions. I’ve also imported the Avada demo site + content which had some pre-loaded events that I’ve now deleted.
My issue: When altering a demo event (prior to removing them), or making a new event any information input to the ‘The Events Calendar’ area does not save. This includes the venue and organizer, and time/date of the event.
The feature image and Title save and can be updated accordingly, but nothing else. Every time the page is saved they reset to whatever they were auto-filled with (todays date) and when I attempted to change the demo events they defaulted back to whatever they were configured as.
I’ve got not other issues across the site that lead me to believe it’s anything to do with something else and disabled all ‘non-essential’ plugins for troubleshooting.
