Unable to make posts appear on page

Apologies about long question and thank you to anyone kind enough to help us out… “us” being myself and the non-profit I am trying to help.
I used the “zeetasty” theme and it was done on a minimal budget for a non-profit (one that actually does some good in the world). So, I couldn’t buy the pro version on that budget and the author wouldn’t assist.
The site owner *loves* the colours, layout and especially the “lobster” font that happens to match an important set of graphics they have in use. At this point changing themes is really not going to happen. But I am having trouble that I think might have been avoided had I just gone with twenty-fourteen theme.
I am really new to setting up WP sites… which will be obvious.
Problem: Cannot make new posts show up on a page as an actual post… just as a link to a post that you have to click to view. I want ONE page to be the place where the NPO staff can type in new info and click publish – should be easy! No!
I created a page “News & Events” that shows up nicely in the nav bar at the top of each page. Perfect. But I have tried creating a post and added the category news & events – it doesn’t show up on the page. I tried everything I can see as “obvious” on the dashboard screen when writing the post but nothing. I tried creating it as a new page that would then be nested under news and events. That made sure it wasn’t in the navbar but it meant there wasn’t a visible link to it anywhere. I went back and deleted the subpage and stuck with it as a post, which is what I wanted anyway… I went into the widget section and the option for posts are to list the most recent but all it does is make a small box on the news and events page (and all subpages in the site) with the post titles as links.
What I want to do is have the end-user be able to log into the site, create a new post and be able to say it belongs to news and events and at that point it becomes the latest incarnation of that page, with all the previous posts flowing down underneath so one just has to scroll down OR with arrows/links at the bottom that allow people to move on through all the previous posts.

https://selfhelpconnection.ca/news-eventsI don’t know if I am just hampered because the theme goes about things in a specific way so that what I want isn’t obvious to do or if it’s just because I don’t follow how to do certain things on wordpress yet. I see the post format section looks hopeful but I’ve tried them all and nothing looks different.
Oh… I DO understand HTML5, XHTML and CSS design so I was able to make some things work by finding the right attributes, etc., in the style sheets. But I do NOT know php and nothing I’ve tried there has worked well … at all. I can break it but that’s about it.
