Unable to add email address

Hi, when I am adding a new order as customer there isn’t an option for me to add an email address to the order at the checkout, it is using my default admin email address for the order.
Also when the order is placed, it is putting this “on-hold”, does that mean when I change status to processing the customer will automatically receive a new order notification, or does this need to be done manually?
