In the settings, I see there is an option that asks ‘Tracking default’ Yes/No.

What is default? When chosen Yes what will the setting and when chosen No what will the choice?

And, which is the recommended option to be 100% GDPR compliant?

I believe the default setting of Tracking default ‘Yes’ choice will make it NON GDPR compliant. Is there anyway this is done while not breaking GDPR compliance? or is this a personal choice and we should turn it OFF to make the plugin GDPR compliant? If yes, its better to make the ‘Tracking default’ options default choice be ‘No’ instead of ‘Yes’ when installed and make the user choose ‘Yes’ if GDPR is not an issue for them.

GDPR is not simply about to track or not to track, it may depends on your privacy policy. The compliance should be discussed with a privacy consultant. Keep in mind that, tracking data is stored in your blog, so there is not the problem of giving that information to a third party.
