There are two different issues. We have responded to both below.
A. Bulk Noindex Term Pages
Yoast does not have a way to bulk disable all those terms. If you do not want them to appear in Google the workaround is to use our filter here: https://gist.github.com/amboutwe/0c71e42aa164238007d7ea88f174a93f#file-yoast_seo_robots_remove_single-php to develop on the Yoast plugin to force a noindex tag to appear on those term pages.
When that happens Google is expected to drop those pages off from the SERPs.
Unfortunately, there’s a difference between the support we can offer and the level of programming needed to change (core) features of our plugin. Since we don’t want to take the risk that we break your website by suggesting incorrect or incomplete code, we cannot advise you on how to make such changes. And even though we cannot be of any assistance, you’re completely free to change anything in the plugin to better suit your needs.

B. I tried to change the options for 50+ terms but it seems that Yoast is not able to save my choices.
We would expect that you would be able to change the options and save as expected. We would like some more information.
1. We had another recent release. Can you confirm you are using the most recent Yoast SEO, v15.4? If you update, does the issue resolve?
2. Are all your non-Yoast plugins and themes also updated?
3. Can you confirm you are using WordPress 5.6? You can check by clicking on the W in the top left and selecting About. 4. To clarify, you are going to SEO-Search Appearance-Taxonomies and clicking on the different product attributes (pa_nameofattributehere) and selecting NO. You are doing this for many different products at once and then saving those? When you save that change to NO did not save? See image: https://ibb.co/kygBsMb
IF SO, does the same result happen if you did it with 10 or 5 in a row? What about if you just did it with one? Does the change take?
